Easy and Fast Bean Soup

My favorite bean soup recipe, I learn from my mother. She use to make them often when we lived in Brazil. Is so simple, your family won't believe that it took you about half an hour to make it. Well, almost half an hour, not counting soaking the beans overnight.

Ingredients needed.


  1. 1 lbs Ground beef or turkey

  2. 2 cups of Pinto beans or 3 cups black bean (soak them for at least 24 hours)

  3. 1 onion

  4. green onions

  5. 3 good size tomatoes (chopped into cubes)

  6. chicken stock/ ready made boullion

  7. smoke sausages, beef or turkey

  8. options: cooked carrott, and or cooked potatoes cubes

Start by soaking the beans overnight or 24 hours prior to cooking. Drain the water before cooking them.


In a pressure cooker , using either cooking oil or olive oil, sauted the onions until they are almost clear, add ground beef and cook them well done. Add the soaked beans, the diced tomatoes and the beef stock or chicken boullions ( you might need two pieces of the bouillion - watch for MSG, most bouillion has MSG, go to your Wholefood stores or local co-op for natural broth with no MSG added ). Put enough water to cover you mix, follow your pressure cooker instructions, some pressure cookers are smaller in size, so watch for the allow amount of liquid. You can always add more liquid later. Close the lid and wait until pressure builds up and let it cook for 25 minutes. Once time is up, turn off and wait until all the pressure is down, open the lid and add chopped green onion and cut small pieces of beef sausages. Serve with cooked rice.
